Honey Mustard. Sweet and Tangy Sriracha, Blueberry BBQ
It's that time of year again when the weather starts to get colder outside and all things football is happening. In our house, football is actually banned, at least until the end of the baseball season and the World Series is over, haha. Clearly, my husband is a bigger baseball fan than he is football.
I, however, grew up in the south and cheered for football pretty much from birth till college. Needless to say, I had to learn to love and understand baseball almost as much as I do football.
Either way, though, when sports are on, that means that the snacks are on and in our house wings rule. So I have a treat for you guys today. I'm sharing a few of my favorite wing recipes with you guys today to make sure you are ready for your next tailgate (or a football night because hello wings).
These easy recipes come together super fast, and they are devoured even quicker! Whether you like them a little sweet, a little spicy, or something unexpected, these flavors have it all.
What Makes Chicken Wings Taste Great?
Great wings have crispy skin, with moist and tender meat. Most good wing places have this down to a science but don't worry you can still do it at home too, even without a deep fryer.
How to Make Crispy Oven Baked Wings
- Toss the wings in oil of choice. I usually use butter or olive oil for this.
- Place the wings on a rimmed baking sheet fitted with a wire rack, not overlapping.
- Bake until they are cooked and crispy!
Secret to Crispy Oven Baked Wings
Baking powder - Okay stick with me here. Yes baking powder is usually used as a leavening agent in baking. When you mix it with salt it actually dries out the skin of the chicken wings which helps them to get even crispier.
A note about baking powder: Traditional store-bought baking powder is a mixture of sodium bicarbonate, cream of tartar, and cornstarch. So if you are sensitive to corn, you should not buy this. Instead, make your own.
Homemade Baking Powder
- 2 TBS Baking Soda
- 4 TBS Cream of Tartar
- 2 TBS Arrowroot Starch or Tapioca Starch
Combine all the ingredients and mix well. Store in an airtight container. Use as you would store-bought baking powder in your recipes as needed.

Paleo Tailgate Worthy Wings
Ingredients
- 3 lbs Chicken Wings
- 1 ½ teaspoon Salt
- 2 TSP Baking Powder
- Sauce of Choice
Instructions
- Preheat the oven to 400 degrees and line a rimmed baking sheet with parchment paper and place a wire rack on top, set it aside.
- Dry the chicken thoroughly with paper towels. Make sure you press down hard to remove as much excess moisture as possible from the chicken wings.
- Place the chicken wings in a large bowl and add the baking powder and salt. Toss the chicken and let it rest while you make the sauce.
- Combine the sauce ingredients into a medium saucepan over medium heat and bring to a simmer. Allow the sauce to come together and thicken to desired consistency, let it cool for about 5 minutes.
- Bake the wings for about 30 minutes.
- Pour about ¼ of the sauce mixture over the wings and toss to coat, reserving the remaining sauce.
- Bake the wings an additional 20-30 minutes or until they are golden brown and crisp; about 50-55 minutes total, making sure to rate them halfway through.
- While the wings are baking, you can thicken your sauce if desired. With the sauce in a pan over medium heat, pull about 1-2 TBS of sauce and place it in a small bowl. Add about 1 TBS Arrowroot starch and mix until the mixture is thick. Add this paste back to the pan and whisk.
- When your wings are finished baking in the oven carefully remove them from the oven. Change the oven over to a low broil.
- Brush more of the sauce over the wings, coating on all sides.
- Put the wings back into the oven and broil them about 4-5 minutes on each side.
- Note: You will want to watch your wings at this point to make sure the sides don't burn if your boiler is hotter than you expect.
- Transfer the finished wings to a serving platter. Garnish with lime wedges, cilantro, green onion if desired.
- Serve alongside more of the sauce for dipping and LOTS of napkins!
