Next time you're getting ready for tailgating switch it up and make a few new flavors. These Paleo Tailgate Wings will have you named MVP of the snacks!
Preheat the oven to 400 degrees and line a rimmed baking sheet with parchment paper and place a wire rack on top, set it aside.
Dry the chicken thoroughly with paper towels. Make sure you press down hard to remove as much excess moisture as possible from the chicken wings.
Place the chicken wings in a large bowl and add the baking powder and salt. Toss the chicken and let it rest while you make the sauce.
Combine the sauce ingredients into a medium saucepan over medium heat and bring to a simmer. Allow the sauce to come together and thicken to desired consistency, let it cool for about 5 minutes.
Bake the wings for about 30 minutes.
Pour about ¼ of the sauce mixture over the wings and toss to coat, reserving the remaining sauce.
Bake the wings an additional 20-30 minutes or until they are golden brown and crisp; about 50-55 minutes total, making sure to rate them halfway through.
While the wings are baking, you can thicken your sauce if desired. With the sauce in a pan over medium heat, pull about 1-2 TBS of sauce and place it in a small bowl. Add about 1 TBS Arrowroot starch and mix until the mixture is thick. Add this paste back to the pan and whisk.
When your wings are finished baking in the oven carefully remove them from the oven. Change the oven over to a low broil.
Brush more of the sauce over the wings, coating on all sides.
Put the wings back into the oven and broil them about 4-5 minutes on each side.
Note: You will want to watch your wings at this point to make sure the sides don't burn if your boiler is hotter than you expect.
Transfer the finished wings to a serving platter. Garnish with lime wedges, cilantro, green onion if desired.
Serve alongside more of the sauce for dipping and LOTS of napkins!
