Where does Huevos Rancheros come from?
Huevos Rancheros simply translated means "ranchers eggs." It comes from the simple breakfast that the Mexican farmers commonly ate.
This super simple breakfast is big on flavor while being ready in minutes so you can be ready for your day quickly.

Huevos Rancheros Ingredients
This easy recipe has been tweaked over the years to add additional ingredients, but for this recipe, I like to keep it pretty traditional.
- Tortilla - I use Siete Grain-free Tortillas, but you can use your favorite or even a simple gluten-free corn tortilla if you prefer.
- Black Beans - Plain, you don't want ones with added flavors.
- Egg - A simple fried egg, like a sunny side up variety, is what I usually do.
- Salsa - I like to keep things simple with just some diced tomatoes and fresh cilantro and a squeeze of lime, but you what you want.
- Cheese - Traditionally, it is a little bit of crumbled cotija that is used in this recipe, but you can also use queso fresco. Don't like those? Use what you like, or leave it off to keep this dairy-free.
- Avocado - Optional, but I like how it adds a little bit of creaminess when I eat these.
Making Huevos Rancheros
- Fry the tortilla - I do mine in a dry pan because I think the Siete tortillas crisp up nicely without any added oils. Depending on your liking, you might want to add a little bit of oil to the pan. Cook the tortilla for about 1-minute on each side until it gets slightly crispy.
- Fry the egg - I like to mine sunny side up for these but cook yours how you like it.
- Warm the beans - You can do these in a pan or the microwave if you prefer.
- Build your Huevos Rancheros
- Start with your tortilla
- Add the beans.
- Top with egg.
- Add the salsa and sliced avocado (if using).
- Sprinkle with salt and pepper if desired, and enjoy!
I told you these were super simple to make! Just be warned that you might be making more than you think because everyone in our house wants more than one, lol.

Quick and Easy Huevos Rancheros
