This easy Cilantro Lime Cauliflower Rice is the simple side dish that will add a pop of freshness to any meal you add it to!
I often get asked why I don't eat rice since rice is usually (not some flavored) gluten-free. The answer is sort of simple and kind of not. Yes, I am celiac, and some celiacs can handle gluten-free grains. However, after my diagnosis and through the process of elimination, rice was determined to be one of the gluten-free foods that I just can't handle without a reaction.
My husband and girls still eat rice, but this mama likes to stick with the cauliflower rice instead. I really don't miss regular rice because I can make delicious recipes like this cilantro lime cauliflower rice. It's utterly delicious, and it's a plus if you are following any type of keto, paleo, Whole30, low-carb diet or just merely trying to find more ways to add some extra vegetables to your diet!
I mean, just because we aren't eating regular rice doesn't mean we don't love good flavor too. Bonus: It's super simple to make with only a few ingredients!

Tips and Tricks
Fresh or Frozen Cauliflower - It doesn't make much of a difference in the final product of this recipe. You will just need to adjust the cooking time slightly as cauliflower tends to hold on to moisture, so you will likely need to watch your riced cauliflower to make sure it has the consistency you are looking for. Also, often, the amounts in the prepackaged riced cauliflower will be less than what you would get with fresh cauliflower and ricing it yourself.
I personally tend to use more frozen cauliflower since I can keep it in my freezer to have it on hand whenever the craving hits. If I find some really fresh cauliflower, I will tend to rice It and then freeze it myself as well.

Lower in Carbs - There are many reasons someone may want to watch their carbohydrate intake. Luckily, cauliflower has only 3 net carbs when eaten raw.
Antioxidants - Cauliflower is rich in antioxidants that can help reduce the risk of certain types of cancer.
Easy to Make
- Rice your cauliflower (if not using already riced cauliflower.)
- Saute the cauliflower rice until it is tender.
- Remove the skillet from the heat.
- Add the remaining ingredients, and enjoy!
Can you use regular rice?
Yes, you can easily substitute in regular rice for the cauliflower rice if you can tolerate it. I usually cook the rice and then put it into the skillet to dry it out a bit and add the spices when I make it for my husband with regular rice.

Cilantro Lime Cauliflower Rice
Ingredients
- 1 Head Cauliflower About 3 Cups Worth
- 1 teaspoon Salt
- ½ teaspoon Pepper
- 1 ½ Garlic Powder
- 1 TBS Lime Zest
- Juice 1 Lime
- 2 TBS Cilantro Chopped
Instructions
- Rice your cauliflower (if not using already riced cauliflower.)
