I've got one of my family's favorite weeknight dinners for you guys; it's my one pan gluten-free fajitas. These one pan fajitas are one of the easiest dinners to throw together, and they can be customized to fit even the pickiest of eaters in your house.
What makes this meal even better, other than taste, because hello, that's a big deal, at least it should be. It's that this whole gluten-free fajita meal comes together on one pan, which makes for fewer dishes to clean up after. I mean, what parent is begging for more dishes to do during the week with everything else we have going on, right?

Are fajitas gluten-free?
Fajitas are one of my favorite gluten-free dinners to order at a Mexican restaurant because, typically, they are gluten-free or can be made gluten-free really easily by switching out the flour tortillas for gluten-free corn tortillas or just eating all the meat, veggies, and toppings without a tortilla at all. The only real exception that I have found is that at Chuy's restaurant, the fajitas are not gluten-free since they marinate their fajita meat in beer, which contains gluten.
Making gluten-free fajitas at home is just as easy as ordering them out at a restaurant, and they are ready just as fast.
Ingredients.
- The meat of choice - I tend to stick to chicken to make these gluten-free chicken fajitas, but you can also make these with steak or even shrimp.
- Bell Peppers - I like to do a combination of different colored bell peppers for fajitas. Each pepper has a slightly different flavor, and the colors make my fajitas more fun.
- Onion - The best onion for fajitas are usually white, yellow, or red onions. I really like using yellow or red onions for fajitas because they are slightly sweeter than white onions.
- Lime Juice - I like the bit of freshness that the lime juice adds to the fajitas.
- Avocado Oil - Just a little bit of avocado oil helps the seasonings to stick to our fajita meat and veggies and gives extra flavor while cooking.
- Gluten-free Fajita Seasoning - I like to make my own fajita seasoning, but you can buy gluten-free fajita seasoning at the store if you would prefer. See below for my fajita seasoning blend.
Make fajitas your way.
The wonderful thing about making these gluten-free fajitas at home is that you can make them the way you want to.
- Chicken - You can use chicken breast, tenders, or even boneless thighs.
- Steak - I've found the best steak for fajitas is either flank steak or skirt steak. Making beef fajitas in the oven is just as easy as it is for chicken. I will say if you are going to make these gluten-free steak fajitas, don't slice the steak before cooking. The steak will cook faster than the peppers and onions when it's sliced.
- Shrimp - I don't make it often, but shrimp fajitas are delicious. You can even do a combination and make gluten-free chicken and shrimp fajitas. Shrimp doesn't take long to cook at all. I don't add the shrimp to cook until the vegetables are almost done.
- Vegetarian - Leave out the meat and double down on the grilled fajita veggies to make vegetarian fajitas really easily. These will be better than Chipolte fajita veggies and you can get as many as you want. You could also add mushrooms and a can of chickpeas to make delicious chickpea fajitas. If you haven't tried that combination yet, you need to!
Homemade gluten-free fajita seasoning.
I love making my own homemade spice blends at home. A lot of spice blends can contain gluten ingredients, usually in added flavorings for anti-caking properties to prolong shelf life. There are a few brands that make gluten-free fajita seasoning. If you don't want to make your own, just make sure the packet of seasoning you are using is gluten-free.
- 1 Tablespoon Ground Cumin
- 1 Tablespoon Chili Powder
- 1 Teaspoon Garlic Powder
- 1 Teaspoon Onion Powder
- 1 Tablespoon Dried Mexican Oregano
- ½ Teaspoon Cayenne
- 1 Teaspoon Dried Cilantro
- ½ - 1 teaspoon Dried Jalapeno Pepper (Adjust depending on how spicy you like your fajita seasoning or leave out for a milder flavor.)
- ½ teaspoon Salt
Mix everything together and store it in an airtight container. Use how you would use any taco seasoning. This gluten-free fajita seasoning will stay good in the pantry for about six months. Remember that spices lose their potency over time; the longer it sits, the less flavor they will have, so it is best to use them within about six months of making.
Steps.
My favorite way to make gluten-free chicken fajitas is in the oven. It is really simple and hands-off, so I can prep all the toppings while the meat and veggies cook. To make chicken baked fajitas follow these steps.
- Slice the chicken, bell peppers, and onion and place them into a bowl.
- Add the gluten-free fajita seasoning, avocado oil, and lime juice to the bowl.
- Toss everything together.
- Transfer the chicken and veggies to a baking sheet and bake in a 375-degree oven for about 20 minutes.
Fajitas on the stove.
You can easily make these gluten-free fajitas on the stove instead of in the oven. Simply toss everything together and then into a skillet over medium-high heat. Let the meat and veggies cook, stirring occasionally to help keep them from sticking. Continue cooking until the meat is cooked through and the veggies are tender-crisp.
Air fryer fajitas.
Did you know you can make fajitas in the air fryer? I will admit I've become a little addicted to my air-fryer since I got it last Christmas, and on nights I don't want to wait on the oven to heat, I'll make these gluten-free fajitas in the air-fryer.
To make fajitas in the air-fryer;
- Prep the meat and veggies like you would for the oven.
- Toss everything into your air-fryer in an even layer.
- Preheat it to 400 degrees and cook for about 15-20 minutes.
- Check the meat to see if it's done; if not, toss everything around and give it a few more minutes.
Fajitas on the grill?
You can make gluten-free fajitas on the grill. I have found that it works better to use a Blackstone type of grill. Using a flat surface style grill and making these Blackstone chicken fajitas gives them an extra bit of char which is delicious on fajitas.
If you don't have a flat surface type of grill, you can add a flat-top grill pan (usually made of cast iron or stainless steel) on top of your grill plates or just use some grilling foil.
Gluten-free wraps for making fajitas.
Who else thinks going gluten or grain-free means we have to skip the tortilla? I promise you don't have to anymore; here are a few of my favorite gluten-free tortillas.
- Gluten-free Corn Tortillas (If you can handle them) - Many varieties of white and yellow corn tortillas are gluten-free, including Mission brand corn tortillas, which are certified gluten-free.
- Gluten-free Flour Tortillas - These are a little bit harder to find at times, but Mission brand actually makes a line of gluten-free tortillas, grain-free tortillas, and even almond flour tortillas if you can find them.
- Lettuce Wraps
My favorite gluten-free tortillas are from Siete Brand. They have several different varieties that are all grain-free, but some of them do have nuts.
My personal favorite ones are the cassava flour ones when I want more of a flour tortilla flavor and the almond flour ones when I want a little more of the corn tortilla texture.
Of course, if you really wanted, you just eat this straight from the pan. I know I am totally guilty.
Gluten-free fajita toppings.
Now that you've made your gluten-free fajitas, it's time to make them even more delicious with a few extra toppings. You can go as simple or not that you want. That's the beauty of making your own gluten-free fajita kit at home.
