What's the Secret?
The secret to the best breakfast taco lies in the eggs; that's right, it's the eggs. Say goodbye to chunks of scrambled eggs falling all over the place. What you really want is a warm egg blanket to wrap all the fillings up with.
How to Make the Perfect Eggs for Breakfast Tacos and Burritos
1. Prep the Eggs
In a bowl, scramble the raw eggs with a bit of milk (or water) and desired spices until it is combined and slightly fluffy, like you are going to make an omelet.
2. Warm the Skillet
Preheat a small skillet (you want it slightly smaller than your tortilla) over medium heat with a bit of fat, depending on preference.
3. Cook the Eggs
Pour some of the egg mixture into the skillet and let it cook till it's almost done. (Do NOT touch it or scramble, let it cook)
4. Add the Tortilla
When it's almost done, place your tortilla on top of the egg and let it cook a minute longer, so the eggs and tortilla stick to each other.
5. Flip and Fill
Carefully flip both the tortilla and the attached egg over in the skillet. Place desired fillings into the middle, fold over the side or sides (for larger tortillas), and let it cook a minute longer to crisp up the tortilla.

What to add to a breakfast taco?
Really you can't go wrong with what you like, but a few of my favorite things to put in them are some Crispy Breakfast Potatoes, Bacon, and sometimes some Breakfast Sausage depending on my mood. I also love all the veggies, salsa, and cheese to bring it all home. Add what you want and not what you don't.
Common Questions
You can use what you like. I usually use the Siete Grain-free Tortillas (I haven't found the burrito sized yet), but you can totally use whatever gluten-free tortilla you like. I've also had luck making these with corn tortillas which adds a bit extra crunch.
Depending on the tortilla, sometimes it needs a little bit of help. The best way I've found to do this is to sprinkle a bit of cheese on top of the eggs and let it melt a few seconds before adding the tortilla. The cheese will adhere to the tortilla, making it stick and easier to flip as one.
I haven't tried, but I assume, just like with breakfast burritos, you can. Make sure they cool completely before wrapping them up in parchment and foil to freeze. I would also leave out some of the fresh toppings until you are ready to eat them, as they won't freeze well.
