There is no doubt in my mind that once you try these gluten-free chocolate chip cookies, you'll agree they are the best!
When it comes to gluten-free cookies, I have a pretty high standard. When it comes to homemade chocolate chip cookies, it's my husband who has a pretty high standard. So when it came to making these gluten-free chocolate chip cookies, I knew the bar was set pretty high. I can't be mad, though, because he's been used to me making him delicious chocolate chip cookies our entire marriage, even before I was diagnosed with celiac.
In fact, I still make him his favorite non-gluten-free cookies he loves. But I know these are the best gluten-free chocolate chip cookies because he can barely tell the difference between the two recipes. Trust me; there have been several failed attempts at this over the years, haha.
Let's just say these gluten-free chocolate chip cookies even surpassed the test against Crumbl's chocolate chip cookie. They are that good!

Ingredients.
Here are the ingredients you need for making delicious gluten-free cookie dough.
- 1:1 Gluten-free Flour Blend - I use King Arthur 1:1.
- Cornstarch
- Baking Soda
- Salt
- Sugar
- Brown Sugar
- Eggs
- Molasses
- Vanilla
- Gluten-free Chocolate Chips

Ingredient notes and substitutions.
- Gluten-free flour. - You want to use a gluten-free flour blend that already contains xanthan gum in it. If your blend does not contain xanthan gum, add ¼ of a teaspoon to your cookie dough.
- Brown sugar. - You can use either light or dark brown sugar in this gluten-free chocolate chip cookie recipe. The dark brown sugar cookies will have a little bit more chew to them than the light brown sugar because of the added molasses content.
- Corn starch. - You can also use arrowroot starch instead of corn starch if you want. Sub equal parts by weight if you use arrowroot.
- Gluten-free, dairy-free chocolate chip cookies. - You can make these gluten-free chocolate chip cookies to be dairy-free cookies as well. I have had luck doing this by subbing the butter for Earth Balance sticks and making sure you are using dairy-free chocolate chips to make this a dairy-free cookie dough.
- My favorite brand of gluten-free and dairy-free chocolate chips are Enjoy Life brand.
Steps.
You are just a few simple steps away from making the best gluten-free chocolate chip cookies.
- Cream the sugars with melted butter.
- Add in the eggs, vanilla, and molasses.
- Whisk the gluten-free flour, cornstarch, baking soda, and salt together.
- Fold the dry ingredients into the bowl of wet ingredients.
- Add the chocolate chips.
- Let the dough rest at room temperature while you preheat the oven.
Can you eat cookie dough raw?
This gluten-free cookie dough uses eggs and raw flour, so it's not recommended to eat it before you bake the cookies because you could get salmonella poisoning. Tips and tricks.
Here are my best tips for making the best gluten-free chocolate chip cookies every time you bake.
- Melt the butter, but don't overcook it. You don't want to lose any water from the butter.
- Measure the gluten-free flour by weight to get the most accurate amount. If you don't have a scale, be sure to fluff your flour blend before spooning it into a measuring cup and then leveling it off. Never scoop gluten-free flour.
- Use room temperature ingredients.
- Do NOT overwork your dough. The more you work your dough, the tougher it will be. For these gluten-free cookies, I actually like to hand mix with a whisk and a spatula to fold in the flour and chocolate chips.
- Let the dough rest for about 20 minutes at room temperature before scooping and baking. This helps the gluten-free flour ensure it is moist before baking.
- Check your oven temperature. If your oven thermometer does not read the correct temperature, you could end up over or under-baking your cookies.
- Let the cookies cool on the tray for about 10-15 minutes before transferring them to a cooling rack.
Gluten-free baking FAQ.
When it comes to gluten-free baking and gluten-free flour blends, they are not created equal. Some blends do better for cakes and cookies, while others do better for making gluten-free bread.
For this gluten-free chocolate chip cookie recipe, I prefer a lighter blend that already contains xanthan gum in it, which is why I use the King Arthur 1:1 blend for these and most of my gluten-free cookie recipes.
There are so many different brands of chocolate chips, and many of them are gluten-free chocolate chips, including some of the most popular brands like Nestle Toll House, Hershey's, and Ghirardelli's milk chocolate and semisweet baking chips. Always check your packaging to make sure you are using gluten-free chocolate chips, and when in doubt, check with the company.
Storing gluten-free cookies.
How long do these chocolate gluten-free cookies last?
In my house for about a day, and if any company is coming over, I better be making a double batch, haha. But these cookies will last in a container at room temperature for about a week, like most cookies. These cookies do not get crumbly after a day as some gluten-free cookies can.
Make ahead.
When it comes to cookie dough, I am usually all over on the team, let the dough chill. This gluten-free cookie dough doesn't need any chilling, but chilling the cookie doesn't hurt it either.
- If you want to make these gluten-free chocolate chip cookies ahead of time and chill the dough, you can.
- Just make sure to let them rest at room temperature while you preheat the oven.
- The cookies also need another 1-2 minutes of baking time since the dough is cold.
Freezing cookie dough.
I usually have frozen cookie dough balls in my freezer to take out and bake fresh, which you can do with these gluten-free chocolate chip cookies.
- You can freeze the cookie dough into balls and bake them from frozen.
- Just add 2-3 extra minutes of baking time. If you want that fresh-baked cookie texture, then I suggest baking the dough fresh and freezing the already baked cookies.
- Freezing these gluten-free chocolate chip cookies also makes a delicious gluten-free ice cream sandwich when you scoop some ice cream between two cookies. Or, if you're feeling like you want the real deal, you can whip up a batch of my gluten-free ice cream sandwiches.

The BEST Gluten-free Chocolate Chip Cookies
Ingredients
- 2 ½ Cups 1:1 Gluten-free Flour 310 g, I use King Author 1:1 Blend
- ⅓ Cup Cornstarch
- 1 Teaspoon Baking Soda
- 1 ¼ Teaspoon Salt
- ½ Cup Butter Melted or use a dairy-free alternative like Earth Balance Sticks.
- ¾ Cup Light Brown Sugar
- ⅓ Cup Sugar
- 1 Tablespoon Molasses
- 2 Teaspoons Vanilla
- 2 Large Eggs
- 1 Cup Chocolate Chips Make sure you are using gluten-free chocolate chips as well as dairy-free for making these cookies dairy-free.
Instructions
- Preheat the oven to 350 degrees and place a piece of parchment paper on a baking sheet.
- Melt the butter in a bowl.½ Cup Butter
- Whisk the sugar and brown sugar into the melted butter.¾ Cup Light Brown Sugar, ⅓ Cup Sugar
- Add the vanilla, mollasses and eggs to the sugar.1 Tablespoon Molasses, 2 Teaspoons Vanilla, 2 Large Eggs
- Whisk the flour, cornstarch, baking soda, and salt together in a separate bowl.2 ½ Cups 1:1 Gluten-free Flour, ⅓ Cup Cornstarch, 1 Teaspoon Baking Soda, 1 ¼ Teaspoon Salt
- Fold the dry ingredients into the sugar mixture. The dough might look like it won't come together, but it does; just keep folding in the flour.
- Add the chocolate chips to the dough and fold them.1 Cup Chocolate Chips
- Let the dough rest at room temperature for about 20 minutes before baking.
- Scoop the cookie dough into balls about 2 tablespoons in size. Be sure to leave room around the cookies to let them spread a little bit.
- Bake the cookies for 9-11 minutes. If you like your chocolate chip cookies a little on the softer side with gooey centers, bake for 9 minutes. If you like your cookies a little bit more fluffy, bake closer to 11 minutes. I do not reccommend baking these cookies longer than 11 minutes.
- Allow the cookies to rest on the baking tray for about 10-15 minutes before transferring them to a cooling rack.
- Enjoy your freshly baked cookies or store them in a container after they have fully cooled for later.
