I will be the first to admit we are not vegetarian in our house. My husband is very much so a meat and potatoes kind of guy. However, we do have a lot of vegetarians in our family. So whenever we get together for family events, we always have a vegetarian option to go with the meals. Of course, we want everyone to enjoy the meals, so no matter who we are cooking for, it has to taste just as good as the rest of the food.
My sister-in-law is vegetarian, and so are her kids. In fact, my niece also developed some issues with gluten and grains, which, if you know, are in a lot of vegetarian options. I couldn't have my niece not being able to eat something at a family gathering because things would make her sick. So I decided to work with what she could have and what she liked, and that's where these Southwest Black Bean Burgers came from

- Black Beans
- Bell Peppers
- Red Onion
- Cilantro
- Tomato Sauce
- Lime Juice
- Spices
How to Make Southwest Black Bean Burgers
- Mash the black beans.
- Add the remaining ingredients.
- Shape into patties.
- Cook or grill 4-6 min per side.
- Top with your favorite toppings and enjoy!
These Southwest Black Bean Burgers are easy to make and a hit for everyone no matter if you're vegetarian or not. They hold their shape no matter if you cook them on the grill or inside on the stove.
My Favorite Mexican Seasoning Blend
- 2 teaspoon Smoked Paprika
- 2 teaspoon Cumin
- 1 teaspoon Garlic Powder
- 1 teaspoon Dried Shallots
- ½ teaspoon Black Pepper
- 1 teaspoon Dried Mexican Oregano
- 1 teaspoon Dried Cilantro
- ½ – 1 teaspoon Dried Jalapeno Pepper (depending on heat level desired)
- 1 teaspoon Chipolte Pepper
- ½ teaspoon Salt
Mix everything together and store in an airtight container. Use how you would use any taco seasoning.

Southwest Black Bean Burgers
Ingredients
- 2 15 oz Cans of Black Beans drain and rinsed
- ½ C Bell Pepper of Choice diced
- ¼ C Red Onion diced
- 2 TBS Coconut Flour
- ⅓ C Cilantro
- 2 TBS Tomato Paste
- 2 TBS Mexican Spice Blend see above
Instructions
- Rinse and drain the black beans.
- Small dice the bell peppers, red onion, and cilantro and set them aside.
- Mash the black beans. I like to leave some larger pieces for texture, but if you want them completely mashed, keep going till you like the consistency.
- Add the bell peppers, onion, cilantro, coconut flour, tomato sauce, lime juice, and spices to the beans and mix till combined.
- Shape the mixture into patties.
- Either cook or grill the black bean burgers about 4-6 minutes per side, depending on thickness.
- Top with your favorite toppings and enjoy!
