This gluten-free strawberry pie is packed with fresh strawberry flavor with a creamy no-bake cheesecake filling in a graham cracker crust.

Fresh Strawberry pie is one of my favorite no-bake gluten-free desserts to make in the summer when all the fresh strawberries are in season. This gluten-free strawberry pie recipe gives a little twist on the old-fashioned classic strawberry pie you probably remember. I am sure it will quickly become a staple in your kitchen, as much as it is in mine.

What does strawberry pie taste like?

This is not a gluten-free strawberry rhubarb pie. This is a fresh strawberry pie with a twist. Fresh strawberry pie is typically fresh strawberry suspended in thick jello set in a baked pie crust. Both are delicious but could be better.

This gluten-free strawberry pie starts with a graham cracker crust. I've added a layer of gluten-free, no-bake cheesecake filling before topping with fresh strawberries and an easy strawberry glaze. It's a strawberry pie with jello that tastes like you're eating gluten-free strawberry cheesecake. It's just a whole lot easier to make.

Ingredients to make a gluten-free strawberry pie.

This gluten-free pie is made up of layers, and each one adds something to the pie. It takes a little bit of time to make, but the results can't be beaten.

  • Gluten-free Graham Cracker Crust - Gluten-free graham crackers, butter, and sugar.
  • Fresh Strawberries - Do NOT use frozen strawberries for this pie.
  • No-bake Cheesecake Filling - Cream cheese, powdered sugar, heavy cream, lemon, and vanilla.
  • Strawberry Glaze - Sugar, water, corn starch, and gluten-free jello.

Is pie crust gluten-free?

This fresh strawberry pie is made using my gluten-free graham cracker crust recipe instead of a traditional pastry crust. Traditionally, strawberry pie is made in a pastry crust, but I like the texture of the graham cracker crust better. It also helps make this a gluten-free, no-bake pie because sometimes we want delicious without turning on the oven.

If you prefer to make this with a traditional crust, feel free to use your favorite gluten-free pie crust instead. Just make sure to bake and allow it to cool before assembling fully.

Can you make a strawberry pie without jello?

You can make this gluten-free strawberry pie recipe without jello. The jello is only in the glaze of this recipe. If you want to make a strawberry pie without jello, just substitute the jello in the glaze with crushed strawberries or strawberry jam. It will not be as thick, but it will still be delicious.

Can you make the no-bake cheesecake filling dairy-free?

Yes, you can make the filling a dairy-free, no-bake cheesecake. Just swap out the cream cheese for a dairy-free alternative and the whipped cream for whipped coconut milk.

How do you make gluten-free strawberry pie?

Step 1. Make your gluten-free crust.

Step 4. Make the strawberry glaze.

Step 5. Assemble the layers of the strawberry pie, starting with the graham cracker crust, then the layer of cheesecake, then the strawberries. Once you have the berries in place, pour the glaze over the top of the pie and let it chill in the fridge for at least 4 hours before serving.

Tips and tricks for strawberry pie.

  • Wash and completely dry your strawberries. - This is not a recipe where using frozen strawberries is recommended. Be sure to use fresh strawberries in this pie.
  • Assemble your pie before making the glaze. - Once the glaze is made, it will start to set up as it cools. Assembling your pie before you make the glaze helps to ensure that the glaze is on the pie before it does.
  • Keep your strawberry pie cold. - This gluten-free pie has cream cheese, sour cream, and jello. Heat is not this pie's friend. Trust me, though; it cuts perfectly right out of the fridge, and the coldness from the pie will be refreshing on a hot summer day.

How long does gluten-free strawberry pie last?

This strawberry pie will typically hold up for about 2-3 days once it's made, covered with plastic wrap, and stored in the fridge. After that, the strawberries will start to break down and make the pie soggy.

Can you make strawberry pie ahead of time?

Knowing this gluten-free strawberry pie will only last a few days in the fridge, and there are a few tricks you can do to make this gluten-free pie ahead of time without becoming a mess before you can eat it.

  • Make it, but don't assemble the pie. - I like to make the different layers of the pie a day or two ahead (except the glaze) and then just assemble it the morning of. This keeps each layer fresh and separate, so the pie is like being made on the same day.
  • You can also assemble the pie, except for the glaze the day before. - If I want the day of assembly to go quicker, I will make and assemble the strawberry pie up to the point of making the glaze. Then, on the morning of, I will make the glaze and pour it over the pie to chill until I am ready to serve it.

How do you serve strawberry pie?

This gluten-free strawberry pie is best served sliced cold right out of the fridge. If you want to be extra, you can top your slice of pie with some fresh whipped cream. I mean, who wouldn't love that?

Ingredients
  

  • 2-3 Cups Sliced Fresh Strawberries

Gluten-free Graham Cracker Crust

  • 1 ½ Cups Gluten-free Graham Cracker Crumbs
  • 4 Tablespoons Melted Butter Or you can use a dairy-free alternative.
  • 2 Tablespoons Sugar

Gluten-free No-bake cheesecake filling

  • 8 Ounces Softened Cream Cheese
  • ⅓ Cup Heavy Whipping Cream
  • ¼ Cup Powdered Sugar
  • 1 Teaspoon Lemon Juice
  • ½ Teaspoon Vanilla

Gluten-free Strawberry Glaze

  • ¾ Cup Sugar
  • 1 Cup Water
  • 2 Tablespoons Corn Starch
  • 3 Ounce Package of Strawberry Jell-O Mix

Instructions
 

Make the graham cracker crust.

  • Crush the gluten-free graham crackers. You want to make sure you have a fine crumb.
    1 ½ Cups Gluten-free Graham Cracker Crumbs
  • Combine the crushed graham crackers, sugar, and melted butter into a bowl until it looks like wet sand.
    1 ½ Cups Gluten-free Graham Cracker Crumbs, 4 Tablespoons Melted Butter, 2 Tablespoons Sugar
  • Transfer the graham cracker mixture to your baking dish and gently press it down.
  • Go back over the crust using the back of a measuring cup and firmly press the crust together.
  • Either chill the crust for a complete no-bake pie or bake the crust for about 5-7 minutes at 350 degrees. Let it cool before assembling the rest of the pie.

Make the no-bake cheesecake filling.

  • Cream the cream cheese, powdered sugar, lemon juice and vanilla together in a small bowl.
    8 Ounces Softened Cream Cheese, ¼ Cup Powdered Sugar, 1 Teaspoon Lemon Juice, ½ Teaspoon Vanilla
  • In a separate bowl whip the heavy whipping cream until soft peaks are formed. If you want you can blend this in a small food processor, use an immersion blender or your regular blender to whip your cream.
    ⅓ Cup Heavy Whipping Cream
  • Gently fold the whipped cream into the cream cheese mixture.

Prepare the strawberries.

  • Wash, dry and slice your strawberries into desired pieces.
    2-3 Cups Sliced Fresh Strawberries

Make the strawberry glaze

  • Combine the water, sugar and cornstarch into a small pot.
    ¾ Cup Sugar, 1 Cup Water, 2 Tablespoons Corn Starch
  • While whisking, cook the the mixture over medium-high heat until the liquid becomes transparent and it starts to thicken. This should take about 3-4 minutes.
    3 Ounce Package of Strawberry Jell-O Mix
  • Once the liquid has become transparent, remove it from the heat and stir in the Jell-O packet.
  • Whisk the Jell-O into the sugar mixture and set it aside.

Assemble the strawberry pie.

  • Start with your gluten-free graham cracker crust.
  • Then spread the layer of the no-bake cheesecake into the crust.
  • Arrange the fresh strawberries how you want on top of the cheesecake filling.
  • Pour the strawberry glaze over the strawberries.
  • Cover and place the strawberry pie into the fridge to set for at least 4 hours before slicing and serving.

    We loved this pie, thank you! I used strawberry junket instead of jello and it was a little watery on top after chilling but just carefully soaked it up with paper towels. I also used Pamela's Graham crackers for the crust. It was delicious, thank you!
