This gluten-free baked oatmeal comes together in one bowl and makes the perfect easy meal prep for breakfast, no matter if you want baked oatmeal for one or the whole family.
½CupChopped Nuts, or other additions.Don't add more than about one cup total if you use more than one.
Instructions
Preheat the oven to 350 degrees, grease an 8x8 baking dish and set it aside.
Combine the dry ingredients for the oatmeal into a bowl.
3 Cups Gluten-free Old Fashion Oats, 1 Teaspoon Baking Soda, ½ Teaspoon Salt, 1 Teaspoon Cinnamon
Add the eggs, maple syrup and vanilla into the dry ingrediets and mix to coat.
2 Large Eggs, ½ Cup Maple Syrup, 1 Teaspoon Vanilla
Slowly add the milk to the bowl of oatmeal and stir.
1 ½ Cups Milk of Choice
Transfer the oatmeal to the baking dish and top with the fresh strawberries and other additional toppings if desired.
2 Cups Sliced Strawberries, ½ Cup Chopped Nuts, or other additions.
Bake the oatmeal for about 35-45 minutes until the center is set and the top is slightly golden brown.
Serve hot or separate into single portions if using as meal prep. It's delicious both hot and cold.

Make it your own.
Add more or different fruit - I love baked oatmeal with strawberries, but I also love baked oatmeal with bananas. If you want banana baked oats, add them. If you want baked oats without bananas, leave them out. You can also use other berries like raspberries, blackberries, or blueberries.
Add nuts or seeds - Adding sliced almonds, chopped pecans, or your favorite seeds to this gluten-free baked oatmeal adds extra flavor, crunch, and protein.
Shredded Coconut - You can easily add in or sprinkle some shredded coconut on top of this gluten-free baked oatmeal for a little something extra.
Want some chocolate baked oats? - Then add some chocolate chips with your strawberries and make this an easy chocolate covered strawberry baked oats.
Add more protein - If you want to make these baked oats have even more protein, add a scoop of your favorite protein powder with the dry ingredients. You won't even know it's there.
