Notes
This recipe uses mayonnaise as part of its base. You can make it homemade (really easy), or I highly recommend the Primal Kitchens brand.
I prefer to make this recipe with boneless chicken. Feel free to use chicken breasts or even boneless, skinless thighs in this recipe. Just note that the cooking times of the chicken will vary depending on the size of the meat. Don't worry if your chicken has to cook a little longer; the creamy parmesan sauce will help keep in the moisture.
Freshly grated parmesan melts the best in the oven and is what I recommend for this recipe.
Use fresh chicken for this recipe. If you are using frozen chicken, make sure you fully defrost the chicken and pat it dry before adding the sauce on top.
Do not overcook the chicken.
Let the chicken rest for about 5-10 minutes before serving.
