Onions get a bad reputation, but these Quick and Easy Marinated Red Onions will have you adding onions to all your favorite dishes.

  • 1 Medium Red Onion thinly sliced but rings not separated.
  • 1 C Olive Oil
  • 2 TBS Balsamic Vinegar
  • 1 ½ teaspoon Oregano not ground
  • ½ teaspoon Garlic
  • ¼ teaspoon Salt


  • Thinly slice the red onions making sure to keep the rings intact and place them in a shallow bowl.
  • In a separate bowl mix the ingredients for the marinade and mix till combined.
  • Carefully pour the marinade over the slice red onions making sure they are completely covered.
  • Let onions sit for 8-10 hours before using them.
  • Keep them at room temperature to keep enjoying them for the next 2-4 days.


These are best stored at room temperate to help keep the olive oil from solidifying.
Cover or not, it's your preference.
Use them on everything for that extra pop of flavor.
