How to  Spatchcock a Chicken (or a turkey)

Start with a whole bird.

Turn the bird upside down  the breasts are facing down.

Start cutting out the spine.

Cut along the side of the spine with a knife  or kitchen shears.

Repeat step 2 on the other side.

Cut along the other side of the spine.

Remove the spine.

Remove the spine from the bird and set it aside.

Flatten the bird.

Flip the bird over so the breasts are facing up.  Firmly press down on the breast bone until you  hear a crack.
