This Strawberry Sorbet is easy to make and uses only a few ingredients. It's dairy-free, low-carb, and, most of all, delicious!
During the warmer spring and summer months, you'll see our daughters eating all the berries they can find. Our oldest can eat an entire container of strawberries in one sitting if we let her. The last time we went berry picking, I had to tell them to charge me more than they were going to because I was pretty sure she ate a few pounds of them before we even left the fields, haha.
Anytime I make something out of strawberries, she loves it. So naturally, I tend to make more when I have them in season. It makes the berries last a little bit longer before they are eaten. At least that's what I tell myself, so I don't question where all the berries had gone that I just bought hours before.
What is Sorbet?
Sorbet is a frozen treat usually made with ingredients like fruit, fruit juice, sugar, and water. They are typically dairy-free, but some varieties do contain dairy. This is not one of them.
Sorbet vs. Sherbet vs. Ice Cream
Sorbet is the fruit, or fruit puree + water + sugar. It does not contain milk, cream, or eggs.
Ice Cream is milk or cream +sugar + fruit, or other flavors added. It usually has a custard-type base and often contains dairy and eggs.
Sherbet lies somewhere between the two. It starts like sorbet with the fruit +water +sugar but often has dairy added.
If you're wondering how the creaminess compares, it's usually ice cream, then sherbet, and then sorbet, with it being the iciest in the texture of the three.

Ingredients in Strawberry Sorbet
- Fresh or Frozen Strawberries
- Honey or Sugar
- Lemon - Optional, I like to add a bit of lemon juice if the berries don't have much flavor which can happen with some frozen berries.
How to Make Strawberry Sorbet
- Freeze your strawberries (if starting from fresh)
- Place the frozen strawberries into a food processor and blend until smooth.
- Add water to the mixture until the desired consistency is achieved.
- Add the honey or sugar as needed for sweetness.
How long does sorbet last in the freezer?
Sorbet will hold about a month in the freezer, so go ahead and double or triple the batch if you want some extras. When you want to eat it, remember to let it sit out for about 5 minutes to soften to make it easier to serve.
More Frozen Treats
- 16 Ounces Fresh or Frozen Strawberries about 3 cups
- ¼ C Water as needed to loosen
- 2 Tablespoons Honey or sweetner of chocie
- 1 Tablespoon Lemon Juice optional if the strawberries are lacking flavor.
- If the strawberries are not frozen, then freeze them until they are completely solid. This should take 1-2 hours, but I usually just leave them in the freezer overnight.16 Ounces Fresh or Frozen Strawberries
- Place the frozen strawberries into the bowl of a food processor or heavy-duty blender.16 Ounces Fresh or Frozen Strawberries
- Add the warm water and scrape down the sides with a spatula, as needed.¼ C Water
- Blend the strawberries until they are smooth. ⠀
- Taste the sorbet when it is smooth and then add the honey, as needed, for sweetness.2 Tablespoons Honey, 1 Tablespoon Lemon Juice
- Eat the sorbet immediately for a softer texture, or transfer the sorbet into a freezer-safe container and place in the freezer. Allow it to freeze for 1-2 hours or until it is firm. ⠀
